Busy, busy, busy!

So today I have to present my international business project that I have been working on.  School has officially taken over! I have so much to do... homework, studying, papers, projects, applications for internships this summer, cleaning. I have been so excited because this weekend I am supposed to go to vegas for the first time EVER! but I do not know if I have the time now! I promise this weekend I will talk about a hot issue.  I do have a recipe for you its simple and easy!

Based on Standard Process recipe but I add the spice :)

Asparagus Fries

  • Asparagus, however much you like
  • 1 Tbs. olive oil per lb. of asparagus
  • Celtic Sea Salt®
  • spicy mustard 
Cut off woody end of asparagus. Line a pan with foil and preheat broiler. Lay out the asparagus in a line on the lined pan and sprinkle with olive oil first, then mustard, and then Celtic Sea Salt®. Broil for 7-9 minutes, very close to the broiler coil, then turn the asparagus over and broil for another 3-5 minutes (time depends on thickness of the stalks).

Make it a good day. Say 10 positives about yourself right now and reflect on it when you are in a sour mood! I hope you all have the most amazing sunny day!

Finally done with rush! Very stressful weekend; had not time to get any homework done.  So this week is going to be hectic.  I started the toneitup diet plan yesterday.  It is very flexible.  I am trying new recipes and trying to stay away from sugars... breakfast is the hard part with that. I have been looking up new recipes on http://ohsheglows.com.   She is great... reminds me of my life and eating disorders I had.
Yesterday I made

Red Quinoa and Black Bean Vegetable Salad

Inspired by Epicurious.
Yield: ~5 cups
For the salad:
  • 1 cup uncooked Red quinoa
  • 1 (14oz) can black beans, drained and rinsed
  • 1 red pepper, chopped
  • 1/4 cup fresh Cilantro, finely chopped
  • 2 Green Onions, chopped
  • 1 cup fresh corn (optional) *see note
  • 1 small avocado, chopped into 1 inch pieces

For the dressing:
  • 4-5 tbsp of fresh lime juice (Juice from 2 small limes)
  • 1/2 tsp kosher salt, or to taste
  • 1/2 tsp Freshly ground black pepper
  • 1 garlic clove, minced
  • 1/4 cup fresh Cilantro, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp ground cumin, or more to taste

Directions:
1. Cook 1 cup Red Quinoa according to package directions.
2. While quinoa is cooking, prepare the chopped vegetables and whisk together the dressing.
3. Allow quinoa to cool after cooking for about 5 minutes. Fluff with a fork. Add the beans and vegetables and toss well.
4. Drizzle dressing over salad and toss well with salt and pepper to taste. Bring salad to room temperature before serving. Keep fresh in a sealed container for 1-2 days. Makes about 5 cups.

It is so delicious. I had it for dinner last night. I just leave out the avacado until I am going to eat it so that it does not be brown and mushy.  
Today is another busy day. working on a project that is due tomorrow that I have not started because I have had rush all weekend and I do not have my book yet. Then class until 3, work until dinner, and then class until 8:30pm ! I hope we get the project done so I do not have to stay up late.  I am already reday for bed. At least I all ready ran and hour today. If time I might so some intervals on the stairs.

Meal 1:  Oatmeal: 1/4 oats, 1/3 cup dried cherries, 1/2 cup almond milk, 2 tbl honey
Meal 2: 4 rice cakes, 1tbl honey  and 1/2 tortilla and 1 tbl Honey
Meal 3:  Cherries and carrots 
Meal 4:  Red Quinoa and black bean vegetable salad

My day So far

Although the morning did not go as planned I have had a good day. I went to my amazing internship in the afternoon at toneitup and I helped them film a new video and Vienna was there from the Bachelor! She was so nice just how she was on the show! Also I met the girls for the first time!! Which I was stoked about.  After leaving my internship I had to go to class. Then after class at 3 I had chipotle salad bowl vegetarian style and it is less then 300 calories for a huge filling salad! Now I am relaxing until my next class for 3 hours :( followed by my final class,  and rush practice. Long day!

Good/bad morning

The morning has come. I have not had much sleep this week because we have rush practices every night this week until lateee and then I always get up at 645am to run with my friend kelly. Tomorrow is our long run and I have to get up at 6:00am. Dedication! I just wish I could be as anal about my diet. I literally right after my run went and bought dried fruit! ughhhh!!! i need to stop doing that! I need to eat health meals..NO MORE CONSTANT SNACKING! Well I will let you know how the rest of my day is. I am super busy today not going to be home until 12:00 at night but at least I can not snack then! I wish you all a successful day!

Why me, why today, why ?

I live in a world surrounded by the barbie dolls which means 5'7 110lbs big boobed perfect legs, lightly tanned skin, designer clothed, girls. They are or seem perfect. Me I seem to fit in but I struggle. I struggle a lot!!!!! Food, weight, diets, workouts, calories, sugar, fat, health are all things that I think about 99% of every single day.  I hate it I hate it more then anything in this world. I am lost and need to change.  I have tried diets all sorts extreme and normal. And exercise I do a ton of: marathons, 4 hours a day, but on average 1 1/2 why because I overeat. I overeat a lot. I am here to record my every day life of my new life the life of a normal everyday college student who is going to lose the extra weight and still live college life to the fullest.  Wish me luck here  I go! Tomorrow is the big day... today was the last day of constant overeating! Join me! on the Journey that will change your life!! we can do it ! Get ready for tomorrow!
